We are now in the Back to School season! What better way to welcome this season than to make a cake...and not just any cake, the Great (Depression) Opportunity Cake. With baking supplies a bit scarce, we are honoring the time by making a cake that was birthed out of the Great Depression. But during this time, even with an extreme scarcity of food, they still found a way to make cake. So it has been renamed the Great Opportunity Cake to remind us that even though times can be challenging, we can still make a way. We are not breaking down...we are breaking open...baking open :)
